Both teas have been charcoal roasted, and are of equivalent quality. The Old Tree Tanyang Cai Cha is from Fankeng in the mountains surrounding Fu'an. The elevation here is about 1200m, much higher than the elevation of Tanyang Village. The raw material is Tanyang Cai Cha, the heirloom varietal for Panyong Congou. The Old Tree Qimen Maofeng, currently exclusive to this set, is made from heirloom Zhuye Zhong trees at around 800m elevation. These teas are similar in both picking grade and processing styles, so this set is a rare opportunity to directly compare the heirloom varietals of two historic red teas from Fujian and Anhui. The formal kind is when the \u003cem\u003emenhuang\u003c\/em\u003e or yellowing step is done but the mere application of the step does not sufficiently transform the tea into something else. We are only interested in the latter, substantive yellows, where the \u003cem\u003emenhuang\u003c\/em\u003e step meaningfully contributes to the character of the tea. This need for a distinct character was our main consideration when looking for a yellow tea.\u003c\/p\u003e\n\u003cp\u003eDuring an unsuccessful search for yellow tea in Hubei Province back in Spring, we encountered a lot of formal yellows that tasted like green tea. We fared better when looking at yellow tea from Huoshan in Anhui Province. After comparing teas from a variety of producers, including some made by ICH inheritors of Huoshan Yellow Tea, we settled on this \u003cem\u003eHuang Xiao Cha\u003c\/em\u003e.\u003c\/p\u003e\n\u003cp\u003eHuang Xiao Cha, or Little Yellow, is the picking grade in between the bud-only \u003cem\u003eHuang Ya\u003c\/em\u003e and the stemmy \u003cem\u003eHuang Da Cha\u003c\/em\u003e. In our opinion Little Yellow combines the best qualities of both; the elegance of \u003cem\u003eHuang Ya\u003c\/em\u003e with the rustic charm of \u003cem\u003eHuang Da Cha\u003c\/em\u003e. This particular Little Yellow is made from \u003cem\u003equnitzhong\u003c\/em\u003e bushes growing wild in abandoned gardens. The \u003cem\u003emenhuang\u003c\/em\u003e process has been properly executed. Yellowing combined with a charcoal bake finish has given a smooth and refined feel to what is quite robust and burly material.
