'Gongfu’ (skill and effort) refers to its meticulous and labour-intensive \u003ca rel=\"noopener noreferrer\" title=\"tanyang gongfu making\" href=\"https:\/\/pastleaf.com\/blogs\/blog\/tanyang-gongfu-part-3-processing\" target=\"_blank\"\u003eprocessing\u003c\/a\u003e. Originally an important export tea, today there are two types of Panyong Congou: Traditional, and New Technique.\u003c\/p\u003e\n\u003cp\u003eThe Traditional type of Panyong Congou uses the local heirloom varietal: \u003cem\u003eTanyang Cai Cha\u003c\/em\u003e. This seed-propagated varietal has a mellow sweetness combined with a fresh, crisp feeling, like an apple. As recognised experts on Panyong Congou, they have collected a large number of historical objects and documents related to this tea and curated a musuem in Fu’an. Traditionally processed, this tea has a stronger aftertaste than the classic Tanyang Gongfu, with a clean, refreshing, dry wood profile. Old bush Tanyang Cai Cha like this one is the preferred tea of experienced tea drinkers in Fu’an. Jin Mu Dan is a hybrid of Tie Guan Yin and Huangdan, inheriting the orchid and peach aromas from these parent cultivars. \u003c\/p\u003e\n\u003cp\u003eBecause of its popularity for New Technique processing, there is a glut of Jin Mu Dan Tanyang Gongfu’s on the market. Mass produced versions often suffer from improper fermentation, and subsequent over-roasting to cover up these flaws. Beyond basic requirements like a clean ecology, good Jin Mu Dan from Tanyang requires a light shaking step to develop the floral-fruity aroma, and a careful charcoal roast. For the shaking step, the machine is set at much slower setting than you would see for oolong making, in order to develop aroma without over-oxidising or breaking too many leaves. After drying, additional charcoal roasting enhances and fixes aroma.  \u003c\/p\u003e\n\u003cp\u003eThe Chen Family’s signature Jin Mu Dan does not compromise on any of the above aspects. This tea is now three years old. Made by Shi Liqiang, an Intangible Cultural Heritage Inheritor and 7th generation of the Shi Family. The Shi Family goes back to Shi Guangling, who was one of the first producers of Panyong Congou. A statue of Shi Guangling can be found in Tanyang Village, next to the family's preserved Qing Dynasty tea factory.\u003c\/p\u003e\n\u003cp\u003eBesides gongfu brewing, this tea works well brewed 'Western' style in a large teapot. Most Fu’an locals used to drink tea in a large teapot. Gaiwans and gongfu brewing are relatively recent developments in the region. This tea has an old-fashioned Tanyang Gongfu taste. This tea possesses an elegant and refined floral and fruity fragrance. \u003c\/p\u003e\n\u003cp\u003eBecause of the cultivar's popularity for New Technique processing, there is a glut of Jin Mu Dan Tanyang Gongfu’s on the market. Mass produced versions often suffer from improper fermentation, and subsequent over-roasting to cover up these flaws. Beyond basic requirements like a clean ecology, good Jin Mu Dan from Tanyang requires a light shaking step to develop the floral-fruity aroma, and a careful charcoal roast. For the shaking step, the machine is set at much slower setting than you would see for oolong making, in order to develop aroma without over-oxidising or breaking too many leaves. After drying, additional charcoal roasting enhances and fixes aroma.  \u003c\/p\u003e\n\u003cp\u003eThe Chen Family’s Jin Mu Dan does not compromise on any of the above aspects.
