To see why this aroma type became so popular, it's worth trying a version that is closest to the 'authentic' Yashi Xiang taste. This Yashi Xiang hails from the original Yashi Xiang terroir near Ping Keng Tou village. It is made from 40 year old bushes, two generations away from the Yashi Xiang mother tree. The taste is classic Yashi Xiang, with floral and milky aromas, a smooth texture, and sweet aftertaste. Stormy weather during the harvest period has resulted in limited quantities this year. This one is made from 60 year old bushes in Zhong Xin Yan Village on Wudong Mountain. Initially designed to compete with high grade Fujian and Anhui red teas, China Red uses a blend of cultivars which is considered a trade secret. It is also processed more like a Fujian or Qimen gongfu red, and rolled into a needle shape. This is an exceptionally well-made example of China Red, using only fine pickings. The tea liquor is very substance-rich, full of tea down and seemingly high in saponins. We were able to find a producer who uses much older trees than would normally be used for this tea. When reaching this level of quality, processing styles between different producers can be quite interesting. While the Gold Medal is made by the Li family, this tea is made by the Chen family, and so there are stylistic differences between the two, despite the same cultivar and overall quality. This tea possesses an elegant and refined floral and fruity fragrance.

Because of the cultivar's popularity for New Technique processing, there is a glut of Jin Mu Dan Tanyang Gongfu’s on the market. Mass produced versions often suffer from improper fermentation, and subsequent over-roasting to cover up these flaws. Beyond basic requirements like a clean ecology, good Jin Mu Dan from Tanyang requires a light shaking step to develop the floral-fruity aroma, and a careful charcoal roast. For the shaking step, the machine is set at much slower setting than you would see for oolong making, in order to develop aroma without over-oxidising or breaking too many leaves.
