Here the Shui Xian bushes have been left to grow unpruned since planting. This tea is processed with a very light charcoal bake, just enough roast to add complexity without losing the fresh floral aromas ZPSX is known for. It’s hard to get this balance right, because roasting ZPSX usually shifts the overall profile of the tea dramatically.
