The material for this tea comes from Shui Xian bushes that are old enough to grow tall, but not old enough to be considered old bush. Another reason they are tall is because Master He has left them to grow wild, unmanaged and unpruned. They are only harvested once a year in Spring. This is quite rare, since most Zhangping farmers will also do an autumn harvest.
This tea starts light and very fragrant with orchid aromatics, becoming richer and sweeter over the course of a session. Short steeps (around 20 seconds) will emphasise the fresh orchid note, while long steeps (around 1 minute) will produce a stronger brew with an osmanthus note. While still being an aroma-focused tea, there is a bit more texture and depth than a standard unroasted Zhangping Shui Xian.
We recommend brewing as the locals do in Zhangping: one cake per 100-120ml gaiwan, and giving a long rinse of at least 30 seconds. Each cake is about 10 grams, with some minor variation due to the hand-pressing technique.
