The first Zhangping Shui Xian for the 2026 season is made from spring leaves from a higher altitude abandoned garden. Here the Shui Xian bushes have been left to grow unpruned since planting. This tea is processed with a very light charcoal bake, just enough roast to add complexity without losing the fresh floral aromas ZPSX is known for. It’s hard to get this balance right, because roasting ZPSX usually shifts the overall profile of the tea dramatically. Only highly skilled producers like Mr Shen can achieve this result consistently.
We interviewed Mr Shen last year for our documentary. He is an experienced producer in the core Nanyang Town production area. His tea has been studied in Zhejiang University’s Tea Science department as a reference for Zhangping Shui Xian.
Smooth, thick, and durable, with a bit more complexity than an average Zhangping Shui Xian. We recommend brewing as the locals do in Zhangping: steeping a whole cake in a 100ml-120ml gaiwan.
