Processing: New Technique

This tea uses a blend of two cultivars named after flowers: Zi Mei Gui (Purple Rose) and Jin Mu Dan (Golden Peony). Unlike other blends, where maocha or even finished teas are mixed together, in this case the fresh leaves are mixed from the very beginning. These two cultivars grow side by side in the same garden. Immediately after picking, the fresh Zi Mei Gui and Jin Mu Dan leaves are mixed. The two cultivars then go through withering and every subsequent processing step together, including a charcoal bake finish, ensuring a thorough blending of their aromas. The result is an innovative Panyong Congou that is very aroma-forward yet balanced by a mouthwatering and smooth texture.

The Li Family consider this to be one of their finest teas. Both Mr Li and his son have been appointed Intangible Cultural Heritage Inheritors. Interviews with the Li Family members will be published in our upcoming documentary.
